JOB TITLE: CHEF

LOCATION: Primary location will be St Mary?s Boarding Campus, Navan
Road, Dublin 7 and Ad Hoc required cover in St. Josephs Boarding
Campus, Ratoath Road, Dublin 7.

CONTRACT DURATION: 2-year fixed Term, Part ? time, normally Monday
? Thursday 2pm-7pm

SUMMARY:

Reach Deaf Services seeks a professionally qualified Chef that will
share our commitment to high standards and will ensure that boarder
needs and preferences are recognised and delivered. The successful
candidate must have excellent communication skills and good
interpersonal skills, who will build rapport with the boarders and
recognize them as core to the service. The selected candidate will
need to actively work in line with our healthy eating policy.

DUTIES AND RESPONSIBILITIES:

Below are the key areas of responsibility;

* Plan the provision of the catering service taking into account
budget, variety, nutrition and seasonality, appropriate to the needs
of boarders and staff
* Cater for special diets as required and for religious / cultural
beliefs
* Facilitate boarders to prepare and cook their own meals if they so
wish
* Ensure operation to the highest professional standards are in
operation per HACCP
* Ensure compliance with organisational policies and procedures,
national legislation, HACCP, Environmental Health Authority, HSE, HIQA
and other applicable standards
* Ensure that all procedures take account of health and safety
policy and that personal protective equipment / professional attire is
worn as required
* Report to management any observations regarding potential hazards,
faulty equipment, equipment or facilities maintenance requirements,
misuse of equipment or other safety issues, problems or irregularities
* Manage and supervise the kitchen aide and other staff assigned to
the area
* Maintain records relevant to catering and food storage per HACCP
and ensure proper labelling, and secure storage of supplies
* Be committed to on-going training and self-development to ensure
that knowledge, skills and expertise are appropriate to changing
requirements
* Integrate with the boarders on projects in their home economics /
cookery interests, and cater for functions as required
* Prepare realistic menus in line with the outcome of the
boarder?s committee meeting and professional advice from Dietician
* Order catering supplies in compliance with the agreed procedures
and practices
* Use all cleaning agents in accordance with manufacturer?s
instructions, in compliance with Infection Control Policy and HACCP
guidelines and store in a safe and secure manner away from boarders?

* Regularly inspect the kitchen and dining area to ensure that a
high standard of cleanliness and hygiene are maintained, and document
such audits
* Ensure that all equipment is switched off and that the kitchen
area is clean and fully secured at the end of the day
* Arrange for the disposal of all kitchen waste in accordance with
procedures
* At all times comply with the provisions of the Safety Statement
and Risk Assessments.
* Observe confidentiality in all work.

KEY REQUIREMENTS:

KNOWLEDGE (EDUCATION & RELATED EXPERIENCE):

EDUCATION:

* Level City and Guilds **Apply on the website**/**Apply on the
website** or equivalent
* QQI (Formerly FETAC) Level 3 in Irish Sign Language or willingness
to learn

EXPERIENCE:

* Minimum three years? experience working as a chef in a similar
setting
* Experience managing a kitchen as per HACCP and supervising a
kitchen aid
* Knowledge of HIQA Hygiene Standards

TRAINING:

* Continuous Professional Development as required by best practice
standards
* HACCP Training
* Core Competency Training as required by the role, to include Child
Protection and Safeguarding, Manual Handling, Fire Safety, Infection
Control, Risk Management
